Color temp, equivalent to Wein's displacement, will vary with voltage/current to the head. Some packs do nothing more than vary the voltage/current with a trim of the power output causing the color shift. But, if you throw in the fact that many packs allow you to add in or take out banks of capacitors, doing a quantum change to the power level, with little change to color temp, and throw on top of that a change in the flash duration which can also change the color temp a bit... you should find that a good digitally controlled pack will vary up and down the color temp a bit, but keep it in a pretty narrow range.
But let's face it, the color temp will also vary on how the head has been used as older tubes can go cold... and that can be a bigger effect than anything we've mentioned to this point.
If you really want to have fun... high end Broncolor packs allow you to change all the parameters, or if you want it easy, you can use their color sensor and dial in the temperature you want... but that's being really picky!
Considering that sometime ago, Chad posted a picture I really liked and he just used the headlights from his car... like there's a controlled source!
