We would suggest, unless you have already done this, to give Canon a call first and ask them if the sensor really does need to balance out to a 12% grey card. It sounds fairly wierd to us, but maybe that's what cannon does, don't know. But, we'd check first with them by phone.
Then, we'd contact Pantone or go to their website, but probably talk to them directly, about getting a 12% grey card. They will have it. They have virtually every color know to mankind. They are the backbone of the printing industry as you probably know.
This meyhod is a lot less expensive than purchasing a color meter. Plus in our experience color meters are really tricky to work with. Minolta made one that was in our opinion fairly consistent. But, we feel that callibrating the camera itself to your lighting is the most accurate way to go.
There have also been some interesting articles about downloading a custom profile to your camera. I know my Nikon D-100's tended to be about 2/3 of a stop off, which I found was fairly typical for that camera. So, lots of people used the Nikon Capture software to download a custom profile from the web that corrected the problem. Just one more indication that difgital is a whole new world and that there are lots of things that photographers find out about after they have purchased their camera and start using it. But it is also challenging and lots of fun; I think.

Not an issue for me
