Open shade refers to a softer lighting than direct sunlight. Direct sunlight is usually fairly contrasty and harsh. It can be softened by the use of reflectors, diffusion screens, and a variety of other techniques that take time, assistance, and tend to divert the photographers attention from the model.

Open shade results from the natural difusion of sunlight from the surroundings. Light can be filtered through trees, windows, etc. and because it bounces and reflects off of virtually everything, open shade usually gives soft edged shadows that are less intense and harsh than direct sunlight. In the studio, soft box lighting can be used to approximate open shade, so can window light, skylights etc.
In the Northwest, our light is generally difused by clod cover before it is further filtered through trees, gazeeboe and so forth. Thus, our open shade tends to be a little flatter and less contrasty than that in your Southern California image.
When we go to San Francisco to shoot with our friend, Bill Lemon, we always notice the "Sweet" light available on most days. When Bill comes up to visit and shoot with us, he always comments that he feels he is "living in a huge light tent" because of our different lighting.
We really like both locatins for shooting. And, we really like the images you posted. You can't miss!
